Meet Courtney Cole, owner of Courtney Bakes in White Lake, Michigan.

A mother of two and self coined "all-inclusive baker,” Courtney has always found her joy through baking and creating her own recipes. “I find it incredible that the tiniest bit of this or that can make or break a recipe,” she explains.  It is the intricacies that interest her so much.

“Sadly, my love for baking disappeared after I was hospitalized with covid at the beginning of the pandemic in 2020,” Courtney shares. “My taste and smell were gone for so long that I lost the desire to eat anything at all. Eating was a chore, not a pleasure. Once my senses returned, I began suffering from GI issues that led to many long-term food intolerances.”

After living on ultra restrictive diets for months on end, Courtney found herself in a dark place. She began to realize, though, during that time, how many people there are with allergies and intolerances just like her and how underrepresented they were. “Especially in the world of baking,” she explained. “I decided to dive back into my baking to see if I could find that happy place again.”

Courtney launched Courtney Bakes last March with the intention of bringing inclusivity to the community of those with food allergies via delicious treats. She has found joy again and strives to deliver that joy to all of her clients. In addition to offering typical baked goods, Courtney has learned to bake dairy-free, egg-free, nut-free, gluten-free, vegan, low cholesterol, sugar-free, and more.
